Alexander is very excited to introduce you to his new Sous-Chef, his baby sister Retaj.
She is three weeks old. Of course we will have to wait a couple years before she will be able to peel the apples, but we are looking forward to her contributions to our test kitchen.
There is nothing better than to celebrate Fall with an apple picking outing. We went upstate to Ochs Orchard in Warwick, NY on a beautiful day picking tons of apples. We picked Macintosh, Golden Delicious, Granny and Gala apples. They also had a farm stand so I got a huge head of cabbage.
I prefer to use Golden Delicious apples for apple pie, equal parts Granny and Macintosh for my apple cranberry crisp, only Macs for applesauce, but what to do with the Galas?
Well I wanted something savory and I had the cabbage to use up, so I cooked the two together, yum.

Gala Apple Golden Raisin Cooked Cabbage
Yield – 4 Servings
4 Cups Cabbage, shredded
1 Onion, small finely diced
2 Tablespoons Unsalted Butter
2 Gala Apples
1/2 Cup Golden Raisins
1/2 teaspoon Caraway Seeds
1 Tablespoon Apple Cider Vinegar
1 Cup Water
1. Peel
and thinly
slice apples.
2. Sauté onions in butter until translucent,
add apples,
raisins
and caraway seeds
and cook until apple slices are bendy.
3. Add 1/2 the cabbage and water,
stir together bring water to a boil, add remaning half of cabbage and simmer until water evaporates.
Great accompaniment for Trader Joes’s Sweet Apple Chicken Sausage.
