This past fall on a beautiful autumnal day, I had the pleasure of leading my students on a walking tour of Union Square Farmers Market. While there we picked up Golden Delicious Apples for only $4 for a 5 pound bag. They were a little bruised and misshapen, but we did not care as they were going to go into our Apple Cobbler, and who could beat $4 a bag!! I created this recipe for my students who devoured it. This is not one of my low sugar recipes though.
I just made it again for Alexander and he gives it a big thumbs up. Of course, he liked it with lots of vanilla ice cream on top. I prefer mine with nothing on top, but feel free to indulge with some ice cream or whipped cream.

Apple Cobbler
3 Pounds Golden Delicious Apples
1 Cup Raisins (4 oz)
2 Tablespoons Sugar
½ Cup Unsalted Butter (4 Oz)
½ Cup Light Brown Sugar (3.5 Oz)
2 Tablespoons Cornstarch (0.5 Oz)
½ teaspoon Cinnamon
Cinnamon Sugar (1 teaspoon cinnamon to 1 cup sugar)

Peel apples, slice apples into ⅓” wedges on a cutting board with a non-slip mat with a paring knife, and put into a 9” x 13” baking pan.

Cut butter into ½” cubes and sprinkle over apples.

Smush together cornstarch, sugar and light brown sugar and sprinkle over apples. Cover with tin foil and roast at 400 degrees until tender, about 30 minutes. Uncover and stir.

Strain off liquid from apples. Bring liquid to a boil while stirring continuously until thick about 2 minutes after boiling. Pour back over the apples, add raisins.

Using a rolling pin, roll cobbler topping with a little flour on parchment paper until ¼” thick, tear into pieces and put in a patch work pattern (not overlapping) on top of a baking dish, sprinkle top of dough with a generous amount of cinnamon sugar before baking, bake at 300 degrees until light golden.
