Peanut Butter Mini Chocolate Chip Snack Balls from Alexandersmom.com
Ingredients
- 3/4 Cup Oat Bran
- 1/2 Cup Creamy Peanut Butter
- 1/4 Cup Clover Honey
- 1/4 Cup Mini Chocolate Chips (Hint: Keep in the freezer before making so little hands don’t melt chips while making the balls)
Instructions
- Measure oat bran, peanut butter and honey into a mixing bowl, stir together ingredients until combined.
- Using a tablespoon size ice cream scoop portion dough, roll dough between hands to shape balls, put them in a container with space between balls, freeze until firm 1 - 2 hours then put into small snack bags, store in freezer since it’s summer. The kids like them right out of the freezer
Alexander just started day camp and has to bring a snack every day. I’ve been sending him with an assortment of snack pack size chips, cookies, Trader Joe’s applesauce packets, Raisin boxes and granola bars each day. Every time I pick him up he’s still ravenous. I decided we needed something packed with protein that would be fun to eat – Peanut Butter Balls.
My very first cooking demonstration was in 7th Grade. I demonstrated an uncooked cookie in the shape of a ball for my 4-H project at the Mall in Middletown, NY. It was a recipe made for kids just stir and shape. I don’t remember all the ingredients but I do remember honey and wheat germ. So I figured let’s make our peanut butter balls with wheat germ and honey. Well wouldn’t you know it my grocery store didn’t have wheat germ!? But they did have Oat Bran.
Of course Alexander had to have chocolate chips too. Mini chocolate chips are best. End result awesome peanut butter balls with only 4 ingredients and super easy for little ones to make. Alexander made this whole recipe start to finish by himself. We stored ours in small snack size plastic bags in the freezer. I just add it to his snack bag for camp in the morning.
