Happy 4th of July!
With the Fourth of July nearing I wanted to give you my Mom’s awesome potato salad recipe, but when I called her last night to get it I was shocked with how much sugar, butter and mayonnaise was in it. Well I guess that’s why we like it so much, but this would certainly not be healthy enough for an Alexandersmom.com recipe. It will take me some time to figure out how to make it healthier and still be awesome. I’ll have to work on it for later in the summer.
Disappointed, I set aside the 2 pounds of red potatoes I had and tried to figure out something else that would be good for the Fourth of July. Sitting right on the table was a bag of small red delicious apples my sister-in-law had brought for us.
I had thought about coring and stuffing them with raisins and brown sugar for baked apples, but it’s a bit too hot for that. Instead I decided a Waldorf Salad.
I usually put quite a bit of sugar in my dressing for a Waldorf, but this time I was going to leave it all out. I thought about adding extra raisins for sweetness, but instead I noticed the peaches in the fruit bowl, so why not add them for their sweetness. I increased the cinnamon added the peaches and perfect you don’t miss the sugar at all.

Summer Waldorf Salad
Yields – 4 Servings
2 Cups Red Delicious Apples, small dice about 5 small apples (Golden Delicious, Macoun, Gala will do too. I don’t recommend Granny Smith as they are so tart)
1 teaspoon Apple Cider Vinegar
2 Celery Stalks
1 Scallion
3 Tablespoons Mayonnaise
1/2 teaspoon Ground Cinnamon
1/2 Cup Dark Raisins or Golden
2 Peaches, medium to large make sure they are a little firm since you are dicing them
1. Peel, core
and dice apples,
pour vinegar over them and toss so they don’t get brown.
2. Dice celery stalks,
slice scallion in small discs
and add to the apples.
3. Mix the mayonnaise and cinnamon in a small mixing bowl,
it may look like way too much cinnamon, but believe me it’s not.
4. Add raisins to apples
and stir in dressing.
Dice peaches,
Lastly fold in peaches being careful not to crush them.
Let sit in refrigerator minimum 1 hour and serve on some Romaine or Boston lettuce.
I just ate the leftovers for lunch today so it does last overnight in the refrigerator.

You can refrigerate leftovers for one day, but I don't recommend more than that.
