Sprinkle Marshmallow Cookies

1 Cup Unsalted Butter, at room temperature

1 1/2 Cups Sugar

1 Egg, large at room temperature

1 teaspoon Vanilla Extract

3 Cups All-Purpose Flour

3/4 teaspoon Baking Powder

1/4 teaspoon Baking Soda

1/2 teaspoon Salt

Mini Marshmallows

1/2 Cup Assorted Sprinkles

 

1.Whisk together flour, baking powder. baking soda. and salt in a medium bowl.

  1. Beat the butter and sugar in a stand mixer fitted with the paddle attachment on medium-high speed until fluffy, about 3 minutes. Add the egg and beat until combined. scraping down the bowl as needed. Add the vanilla and beat to combine.
  2. With the mixer on low speed, gradually add the flour mixture and beat until incorporated.
  3. Flatten each portion of dough and put a marshmallow half in the center. Fold up the cookie dough, pinching to seal, so that the marshmallow half is completely sealed. Roll into a smooth ball and roll the top in the sprinkles. Repeat with the remaining cookie dough.
  4. Bake the cookies at 325 degrees until lightly golden around the edges, 12 to 13 minutes
