Happy Memorial Day Weekend!
I often hear Moms and Dads complaining, myself included, about how hard it is to cook for all the picky eaters there are in a family. Solution – make something everyone can tailor to their liking, make your own pizza, tacos or our favorite Steak Fajitas.
Even better, put the steak on the grill, invite some people over and have a party. Go crazy with your fillings and have a great time. We use sautéed onions, sour cream, lime wedges, salsa, refried black beans and coleslaw. Get the recipe for our Crisp Coleslaw from last year’s Memorial Day post in our May 2016 archives.
The best way to get the most flavor and a more tender steak is to marinate it overnight. Flank Steak is the best to use, sometimes labeled London Broil, but not to worry top round London Broil is fine too.

Zesty Lime Steak Fajitas
Yield – 6 Servings
1 Pound Flank Steak
1/4 Cup Fresh Lime Juice, about 2 limes, plus extra for squeezing over fajitas
2 Cloves Garlic, minced
1 Tablespoon Canola Oil
1/2 teaspoon Kosher Salt
1/2 teaspoon Ground Cumin
1/4 teaspoon Chili Powder
Large Flour Tortillas
Salsa, Sour Cream, Refried Black Beans, Sautéed Onions, Crisp Coleslaw
1. Mix ingredients together
and pour over steak.
Marinate over night, or minimum 2 hours in refrigerator.
2. In a very hot pan or over grill cook steak to desired doneness. Let steak sit for 5 minutes, then slice thinly.
3. Warm tortillas in the oven or hot frying pan,
add 2 to 3 strips of steak and layer with desired accompaniments.
