I remember exactly where and when I fell in love with Hummus, spring 1991 while going to University at Sainsbury’s deli counter on Glouchester Road, Kensington, London. I had never had it before and instantly loved it. The best hummus I have ever had was also in London at a wonderful Lebanese restaurant named Maroush on Vere Street, which is still there!
When I came back to the states in those days pre-Food Network, hummus wasn’t as readily available as it is today nor as popular until Sabra captured the market. I experimented with making my own for many years, using different recipes and methods, painstakingly removing the skins from every chickpea.
When Alexander came along and started demanding hummus immediately as only a four year old can I figured out a recipe that was super quick and perfect for his (and my) taste buds which was just as good, not to mention saved money compared to a store bought version.

Quick Hummus
Yield – 2 Cups
1 Can Garbanzo/Chick Peas 15 oz, drained and rinsed with cold water
1/2 Cup Extra Virgin Olive Oil
3 – 4 Tablespoons Water, see directions
Juice of Half a Lemon, (1 Tablespoon)
1 Tablespoon Tahini
1 teaspoon Ground Cumin
1/4 teaspoon Kosher Salt
1. Put all ingredients
in a blender
and pulse. Scrape down sides and continue pulsing until desired consistency. If you want a chunky hummus use only 3 tablespoons water. If you prefer a silky smooth hummus use 4 tablespoons of water. Chill minimum 1 hour before serving.
This is a mild child friendly hummus. For a more grown up version add one clove of garlic.
